Our Team

Co-founders Callum and Jorge have worked together for many years masterminding catering at every level, from huge international events to luxury private gatherings. But it was in the shared love of fine dining, world travel and extraordinary moments that they rooted Signature.

With the help of their consultant Jonny Glass, head chef at Heston Blumenthal’s two-MICHELIN-starred Dinner, they strive to blend the theatre of haute cuisine with flawless service and exquisite cooking to create unforgettable events that they are proud to be part of.

Executive Operational Consultant

One of the restaurant industry’s most respected chefs, Jonny Glass’s youth belies his vast experience. Having risen through the ranks at Heston Blumenthal’s Fat Duck at Bray, as Ashley Palmer-Watts’s right-hand man, Jonny is the former head chef at the two-MICHELIN-starred Dinner by Heston Blumenthal – one of the most exacting kitchens in the world.

Acting as a bridge between front-of-house experts Callum and Jorge and our MICHELIN-starred chefs, Jonny is an operational maestro who will ensure that their culinary vision is achieved and surpassed at every event, with a rigorously trained brigade.

He will also collaborate with the chefs on their menus, to ensure they can be exquisitely executed in event conditions, and work with the Signature team to translate the precision and ambience of a fine restaurant into a breathtaking event.
