Co-founders Callum and Jorge have worked together for many years masterminding catering at every level, from huge international events to luxury private gatherings. But it was in the shared love of fine dining, world travel and extraordinary moments that they rooted Signature.
With the help of their consultant Jonny Glass, head chef at Heston Blumenthal’s two-MICHELIN-starred Dinner, they strive to blend the theatre of haute cuisine with flawless service and exquisite cooking to create unforgettable events that they are proud to be part of.

Callum Connolly
Signature Co-Founder
Callum Connolly has been training, managing and leading hospitality teams for a decade. His background in theatre has fostered a unique blend of enthusiasm and empathy with exceptional planning and logistics skills, which he has brought to venues such as Lords, Twickenham, Wembley, The Oval, The Shard, Henley Regatta and Buckingham Palace.
With a natural ability to get to the heart of his clients’ needs, and always going the extra mile to exceed their expectations, he has taken care of guests from royals to international diplomats and politicians to pop icons.
On event day, Callum is on the ground, anticipating, checking, supporting and motivating his team, bringing together that meticulous back-of-house planning and front-of-house charm. With a wealth of exclusive private and high-profile clients, Callum is always in demand for his flair, creativity and the joy he brings to work.

Jorge Sousa

The economic driving force behind the company, Jorge is a skilled financial strategist, with a solid foundation in business. Add his natural likeability and instinctive rapport with customers, and it’s no surprise that he has already built strong relationships with industry players.
Working in partnership with some of the world’s largest hospitality conglomerates, such as the Delaware North Company, Compass Group and Rugby Football Union, Jorge has developed processes, logistics and industry standard practices for huge-scale events, choreographing hospitality teams of up to 200 at world-class televised occasions such as the Six Nations Rugby Championship.
His love of planning, sharp brain for finance, business acumen and a knack for people management ensure every event, whatever the scale, is planned and executed to the same meticulous standard, for the best value possible. And his superb relationships with partners and venues ensure that he can offer more to clients at every level.
He is driven by ‘the pursuit of better’, and by the satisfaction of his clients, partners and team.
