As Executive Chef at the MICHELIN-starred Angler, one of London’s most iconic seafood restaurants, and former head chef at the two-starred The Square, Gary Foulkes knows exactly what it takes to create food that not only packs a flavoursome punch but is also impeccably presented and flawlessly delivered.
Training under the likes of Gary Rhodes, William Drabble and Phil Howard, and influenced by his extensive travels in Asia, he developed the principles of absolute respect for ingredients and seasonality, and a pursuit of flavour above all – concepts that shine through every one of his delicately plated dishes.
His unique style takes the very best that nature has to offer and combines his decades of classical training with an obsessive precision, to create dishes that delight both the eye and the tastebuds.
